No Piping Cherries Layer Cake
With this layer cake I wanted to demonstrate how it is possible to have an elegant cake finish even without doing any special piping, but rather use the spatula to create a striped pattern at the top part of the cake. The crown of cream, formed around the cake is what makes it so unique, at least in my eyes. Regardless, cherries are always unique, it is such a shame they are available for a very short season.

Preparation:
Cherry Compote:
In a small saucepan, cook cherries and sugar on low heat, until the sugar dissolves completely. Divide this mixture as per the table above. Only the portion that is used for the icing cream (35g) should be pureed using an immersion blender or a food processor to a smooth puree without any lumps (it is recommended to strain the puree, but not mandatory). Allow to cool down completely before use.
Cherry Jam:
In a small bowl, mix together the cornstarch and water to combine.
In a small saucepan, slightly cook the cherry compote portion that is used for the filling (100g) and add in the cornstarch mixture. Mix it well while cooking on low-medium heat, until the mixture thickens. Allow to cool down completely before use.
Cake assembly instructions:
- Spread 80g insert cream, top with about 50g of whole cherry jam (do not spread it with a spatula). Cover the cream with another cake sheet.
- Keep stacking all the sheets in similar manner. Use the remaining insert cream to crumb coat the cake.
- Ice and decorate as shown in the photo, or per your personal preference.
