Waffles
Unlike pancakes, as far as I’m concerned, waffles are just an excuse to top them with plenty of topping and syrups so they can be fully enjoyed. This next recipe for a Belgian waffle, turns them crisp on the outside and soft on the inside, and of course beautifully browned.

Equipment: Waffles Machine
Recipe: Makes 4 waffles

Cake Flour | 140g |
Cornstarch | 20g |
Eggs | 50g (1 Medium size egg) |
Salt | 1/8 tsp |
White Granulated Sugar | 40g |
Milk | 90g |
Water | 90g |
Baking Powder | 6g (1 + 1/4 tsps) |
Melted Unsalted Butter | 40g |
Vanilla Extract | 5g |
Preparation instructions:
- Melt the butter in the microwave.
- Into a medium sized bowl, add the butter, sugar, salt, milk, water, vanilla and eggs. Whisk thoroughly to combine.
- Sift the dry ingredients over the wet ingredients: cake flour, cornstarch and baking powder. Whisk thoroughly to a smooth butter without lumps.
- Grease both sides of a waffle machine with some cooking spray, wiping off any excess with a paper towel.
- Allow the waffle machine to heat before cooking your waffles.
- Pour the batter into each cavity, just enough so it doesn’t overflow but very thinly coats the metal bumps.
- Cook the waffles on the lowest heat setting. Mine took 10 minutes to fully cook, but all waffle machines cook differently.
- Serve with any toppings of your choice and enjoy!
