Layer Cakes

I remember that as a novice baker, I would dream about the moment when I could create wonderful layer cakes, made out of sponge and cream, with a professional finish and exciting flavors.

The beginning was extremely difficult, and my first cakes looked absolutely terrible. It took me time to learn, practice and understand where I went wrong, what worked and what didn’t. I sensed a great feeling of joy and satisfaction when I first realized that I could consistently create the cakes of my dreams, time after time again and again.

Personally, I adore cakes of a very particular style- minimalistic, classic, not those tall and huge designed cakes you see on IG, with considerable use of fondant (not against it, but rather just my personal preference), and uncalled for amounts of food coloring (this one is a big no for me). I am not a big fan of buttercream. I am in LOVE with whipped cream- the dairy kind, not the plant-based ones.

I can promise you that anyone can make a wonderful layer cake at home!

I speak from a place where I thought my clumsy hands could not live up to the task, yet I still managed to do it. I therefore believe anyone can do it!

There are no secrets, or any ground breaking news here. Layer cakes are always about a sponge cake, filled and iced with whipped cream (made in many flavors), and garnished with lovely piped decorations. The differences are mostly in the cake’s design and finishing touch (which only proves the many possibilities available to choose from various colors, taste, textures and decorations). I am revealing for the first time my full recipes for the many layer cakes I have published on social media. These are not quite the same as classic recipes, but more of a “design recipe”.

Successful execution of these “recipes”, relies on a good technique. And despite highlighting again that there are no secrets, the recipe in itself is not always enough, when you are on your road to the perfect good-looking cake. Since the technique is key here, I offer baking classes in which I teach everything about layer cakes. Simply because this type of experience hits differently when it comes to a practical approach.
