Salted Chocolate Chip Cookies Recipe. Makes 16 cookies. 100g Softened Unsalted Butter 100g White Granulated Sugar 100g Brown Sugar (sticky) 1/2 tsp Atlantic Sea Salt 56g (1) Large sized Egg 1 tsp Vanilla Extract 185g All purpose flour 10g Cornstarch 1/2 tsp Baking Soda 125g Dark Chocolate Chips 75g Milk Chocolate Chips 50g Quartered Walnuts QS Dark Chocolate Chunks for decorating Preparation: 1. Preheat your oven to 180C (fan mode off) setting a rack at the middle shelf of the oven. 2. In a large bowl, cream together the butter, sugars and salt to a creamy and lightly fluffy consistency. 3. Add the eggs and mix until fully combined. 4. Sift over the dry ingredients: flour, baking soda and cornstarch. Incorporate with cutting motions until 70% combined. 5. Add the chocolate chips and walnuts. Mix them into the batter with folding motions until fully combined. 6. Using an ice cream scoop, or by hands, weigh out 50g cookie dough portions and neatly space them on top of a baking sheet lined with parchment paper. Round the dough into balls between your hands, and top each with extra dark chocolate chunks. 7. Chill for 10 minutes in the refrigerator (or 5 minutes in the freezer). 8. Bake for 14 minutes. 9. Preparation instructions:

  1. Preheat your oven to 180C (fan mode off), setting a rack at the middle shelf of the oven.
  2. In a large bowl, using an electric handheld mixer, cream together the butter, sugars and salt to a creamy and lightly fluffy consistency, on medium speed for 3-4 minutes.
  3. Add the eggs and mix until fully combined on medium speed, about 2-3 minutes. Ensure go occasionally scrape the bowl to promote even mixing.
  4. Sift over the dry ingredients over the butter mixture: flour, baking soda and cornstarch. Incorporate with cutting motions until 70% combined.
  5. Add the chocolate chips and walnuts. Mix them into the batter with folding motions until fully combined.
  6. Using an ice cream scoop, or by hands, weigh out 50g cookie dough portions and place them, evenly spaced, on a baking sheet lined with parchment paper. Round the dough pieces into balls between your hands, and top each with additional dark chocolate chunks.
  7. Chill for the cookies for 10 minutes in the refrigerator (or 5 minutes in the freezer).
  8. Bake for 14 minutes in the pre-heated oven.
  9. As soon as the cookies are out of the oven, sprinkle them with some extra Atlantic Sea salt.
