Bone Jam Cookies:
Equipment: Bone shaped cookie cutter, sized 7cm (l) x 3cm (w).
Recipe: 9 Cookies (multiply recipe as needed)
Cookie Dough:
Ingredient | Amount (g / units) |
Softened Unsalted Butter (Room Temperature) | 60g |
Powdered Sugar | 30g |
Cake Flour | 90g |
Almond Meal | 30g |
Filling- Jam of your choice | QS |
Preparation instructions:
- In a medium sized mixing bowl, using a silicone spatula, cream the butter and powdered sugar together to a uniform and creamy paste.
- Sift in the flour and almond meal over the butter mixture, and incorporate into the dough with cutting motions, to a dough that holds its shape.
- Roll the dough into a large rectangle, with thickness of 0.5cm. I recommend doing this step by placing the dough between a piece of parchment paper and a large piece of plastic wrap.
It is recommended to freeze the rolled dough for 15-20 minutes before cutting it into shapes, as it is very soft.
Any scraps can be brought back together, re-rolled and cut the same way.
- Preheat your oven to 170C (fan mode off), placing a baking rack at the middle shelf of the oven.
- Place the cookies evenly spaced on a baking sheet lined with parchment paper, and bake for 8 minutes, or until lightly browned.
- Let the cookies cool down completely, before filling the cookies with jam of your choice and sandwiching them together.
