Layer Cakes
I remember that as a novice baker, I would dream about the moment when I could create wonderful layer cakes, made out of sponge and cream, with a professional finish and exciting flavors.
The beginning was extremely difficult, and my first cakes looked absolutely terrible. It took me time to learn, practice and understand where I went wrong, what worked and what didn’t. I sensed a great feeling of joy and satisfaction when I first realized that I could consistently create the cakes of my dreams, time after time again and again.
Personally, I adore cakes of a very particular style- minimalistic, classic, not those tall and huge designed cakes you see on IG, with considerable use of fondant (not against it, but rather just my personal preference), and uncalled for amounts of food coloring (this one is a big no for me). I am not a big fan of buttercream. I am in LOVE with whipped cream- the dairy kind, not the plant-based ones.
I can promise you that anyone can make a wonderful layer cake at home!
I speak from a place where I thought my clumsy hands could not live up to the task, yet I still managed to do it. I therefore believe anyone can do it!
There are no secrets, or any ground breaking news here. Layer cakes are always about a sponge cake, filled and iced with whipped cream (made in many flavors), and garnished with lovely piped decorations. The differences are mostly in the cake’s design and finishing touch (which only proves the many possibilities available to choose from various colors, taste, textures and decorations). I am revealing for the first time my full recipes for the many layer cakes I have published on social media. These are not quite the same as classic recipes, but more of a “design recipe”.
Successful execution of these “recipes”, relies on a good technique. And despite highlighting again that there are no secrets, the recipe in itself is not always enough, when you are on your road to the perfect good-looking cake. Since the technique is key here, I offer baking classes in which I teach everything about layer cakes. Simply because this type of experience hits differently when it comes to a practical approach.

Story time: when I initially uploaded this layer cake video online, it was at a stage of when I considered to resign from creating content. Billie Eilish “What was I made for” was a trending song at that time, so I simply decided to name this cake “The Billie Eilish Layer Cake”. I know, it… Read More

This birthday cake was made for a 12-year-old kid who celebrated his birthday, and it sure caught the attention of many people that evening. I guess it could’ve been due to the fact that it is a chocolate cake, with colorful writing, and what seem to be colorful sprinkles around the sides of the cake… Read More

I am not sure in what cave I’ve been living my life, before familiarizing myself with this classic, Australian dessert. This recipe was included in the layer cakes category, since Lamingtons are little cakes, filled with jam and coated with chocolate and shredded coconut. It sounds so simple in terms of flavor profile, but man…… Read More

I love matcha. In all my heart. I’d drink matcha latte long before it became a trend. Matcha adds so much character to desserts made with it. Exactly like this matcha layer cake presented here. Matcha is an acquired taste, therefore, if you’re not a big fan, I’d suggest to try it first as a… Read More

The first time I ever tried apricots was actually during making this layer cake. I recommend to increase or decrease the sugar amounts, needed for the coulis preparation, to better balance the sourness to your taste. This is such a wonderful summer fruit cake; I highly recommend giving it a try! First published: Last modified:… Read More

With this layer cake I wanted to demonstrate how it is possible to have an elegant cake finish even without doing any special piping, but rather use the spatula to create a striped pattern at the top part of the cake. The crown of cream, formed around the cake is what makes it so unique,… Read More

This layer cake was made for a birthday, and I was looking for a unique idea. I’ve decided to pay homage to the American smores, at least by the general concept. Cookie, chocolate and marshmallow, only that the marshmallow is being replaced with a cloud like cream. You could use any cookie recipe that you… Read More

The twin sister cake of the black forest cake- the white forest cake. What makes this layer cake so unique is a cherry cream filling and a clean white finish.
